I hate to tell you this, but there is just over a month left until Christmas.  The time has come to to make a plan.   Will you brave the Black Friday madness or shop like mad from the comfort of your own home on Cyber Monday?  Maybe you've already been picking up little gifts here and there.  Maybe you're way ahead of me and your shopping is already done.  If so, you have my admiration.  I, however, am still trying to shake off the holiday denial.  Why does it always come so fast!?

Now, as much as I love to shop, I also love making gifts from my kitchen.  Last year it was homemade extracts and all-in-one beer bread kits.  This  year it's homemade liqueurs and do-it-yourself flavored sea salt.  Next year I'm thinking do-it-yourself flavored sugars, lip balms, and sugar scrubs.

{DIY} Ginger Liqueur + {$100 @freundcontainer #giveaway}

Still boozin'.  Still infusin'.  Yes, it's become a bit of an obsession.  Seriously, I'm in need of a liquor cabinet to hold the rainbow-hued bottles of liqueurs and infusions taking up space on my counters and in my pantry.  I have designs on a few different ones, actually.  All of which would make the perfect home for my collection of squatters.  But really, can one be blamed for developing such an enthusiasm for experimentation when one receives a shipment like this at their front door?

I think not.

Now, I know I say stuff like "this is my faaaaaavorite" fairly often.  And every single time I say it, it couldn't be more true.  I'm living in the moment.  So yeah, you probably saw this one coming... Guess which liqueur is my current faaaaaavorite right now?

While trying to decide what types of liqueurs I wanted to make, I remembered one that Camilla recently mentioned to me...one she thought I would enjoy...ginger.  I knew she was right.  I love the spicy warmth of ginger, and I could envision the enjoyment that a boozy bottle infused with it could bring me.

Ginger-lovers beware!  You'll want to pour a little of this into everything...

...mostly your mouth.

{DIY} Ginger Liqueur

Prep Time: 3 days (unattended)
Cook Time: 20 minutes

Ingredients (~1500 ml / ~51 fluid ounces)
  • 4 oz. ginger root
  • 1 vanilla bean
  • 2 c. sugar
  • 3 c. water
  • 2 oranges (you'll only need the peels)
  • 1 (750 ml) bottle Brandy
Instructions
Use a spoon to scrape the peel from the ginger; slice it thinly. Split the vanilla bean in half lengthwise.

Place the vanilla and ginger into a medium pot with the sugar and water; bring to a boil. Reduce to a gentle simmer until ginger is soft, ~20 minutes. Remove from heat and cool completely.

Cut the zest from the orange using a 4-hole zester (or use a vegetable peeler, and then cut into thin strips), leaving pith (white part) behind.

Place zest into a glass jar (big enough to hold everything), and then pour the Brandy and the reserved, cooled syrup over it. Seal tightly and shake. Let steep and infuse for 48 hours.

Strain the mixture into a sterilized glass bottle. Let sit at least one more day before serving.

This will keep in a cool, dark place (like a liquor cabinet) for up to one year. If liqueur tastes off or has a cloudy appearance, discard it.

So...do you see these awesome bottles (flasks) that I've been bottling all of my homemade liqueurs in as of late?  Aside from the Ginger Liqueur, there's Arancello and Limoncello, the remains of a couple of batches of Irish Cream, and I just bottled a huge batch of Liz's Coffee (Kahlua) Liqueur.  This weekend I'll be making a beautiful, ruby batch of my favorite Cranberry Liqueur as well.  And then I'm going to have some very happy friends.  Because there's no way I'm drinking all of this myself any time soon.

Banketstaaf (Dutch Christmas Log) + @freundcontainer g!veaway

You may or may not know that Almond Croissants are one of my absolute favorite things in the universe to eat.  I've mentioned.  You know, once or twice.  There's just something about that gooey, almond center encased in flaky pastry, covered in a smattering of thinly sliced almonds, and capped with a mad flurry of powdered sugar that drives me wild!

I feel almost the same way about Almond Coffeecake.  The long, rectangular variety that has that same irresistible line of almond paste down the center.  Not to mention the sliced almonds and powdered sugar.  The only difference is the moist, rich cake-ish casing.  It's dangerous for me to be alone with one.
So, you can probably imagine my joy when, while searching for a Christmas-style pastry to close out #ChristmasWeek, I stumbled upon a traditional Dutch pastry that was basically another version of my beloved Almond Croissant.  I'm gonna go ahead and throw this out there - this recipe is FAR too easy.  So easy that it should be illegal.  Mostly because I almost always have a box of puff pastry in the freezer... across from my stash of nuts (which includes sliced almonds).  Also, rare is the month that I can resist picking up a block of homemade almond paste from one of the Amish ladies at the market.  Plus, you can bet that there is always a bag of powdered sugar in my pantry.

Banketstaaf (Dutch Christmas Log)

Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients (serves ~12)
  • 1 sheet (½ of a 17.3 oz. pkg.) puff pastry, thawed
  • 10 oz. almond paste
  • 1 large egg, beaten
  • 2 Tbs. apricot jam
to finish:
  • confectioners' sugar
  • glace cherries and/or sliced, toasted almonds and/or whole blanched almonds
Instructions
Preheat oven to 425° F. Line a baking sheet with parchment paper.

Lay the sheet of puff pastry out onto a lightly floured surface and roll lightly until you it is 15" long x 9" wide. Cut in half lengthwise.

Roll the almond paste into a log that is ~1" shorter than the pastry (lengthwise). Place on the pastry. Paint the edges of the pastry with some of the beaten egg. Fold in the short ends first, then brush a bit more egg on the plain squares at the corners. Fold over one long end and then sort of roll it up until you have a thin log; press at the seams. Turn the pastry log over so that the seam is at the bottom. Brush all of the exposed surface with the beaten egg.

Slide into preheated oven and bake for ~25 minutes, or until golden brown.
Meanwhile, pop the apricot jam into the microwave in a microwave-safe bowl for a minute or two, so that it melts a little. If it seems too thick for brushing, thin it with a drizzle of water.

Remove from the oven and place on a wire cooling rack. Immediately brush with apricot jam and decorate with glace cherries and/or sliced almonds. Allow to cool a bit.

Dust with confectioners' sugar and cut into fat slices. Serve alongside coffee. (Or don't, your call.)
