I almost went sweet. I actually already had a plan. There was a Towering Flourless Chocolate Cake on the horizon. TOWERING! But oddly enough, I am still sweeted-out from Christmas (and the month or so leading up to it).
So I put that baby on the back-burner. Just for now. I know that I need an irresistible flourless chocolate cake in my future. Especially since it's towering. Ummm... near future, thankyouverymuch.
Now, if you don't want to make heart-shaped ice cubes, then obviously you can make trusty ol' cubes. They're just as fun. Plus, they're bigger. But if you DO decide to treat yourself to a couple of these lightly fizzy cocktails, do yourself a favor and make the ice cubes! As they melt down, the pulpy strawberry emerges from the ice. It's like a bonus.
Plus, it's always good to have food with your cocktails... No?
Strawberry Gin Fizz

Ingredients (2 cocktails)
- 4 fl oz. (½ c.) Strawberry Infused Gin
- ~1.5 fl oz. (1½ Tbs.) agave nectar or simple syrup (more or less, to taste)
- 1 fl oz. (2 Tbs.) freshly squeezed lime juice
- club soda
- Strawberry Ice Cubes (+ a few regular ice cubes for shaking)
Instructions
Combine infused gin, simple syrup, and lime juice in a cocktail shaker with a few "regular" ice cubes. Shake vigorously. Strain into glass filled with strawberry ice cubes. Top off with club soda.
If you haven't infused any gin, or don't want to, you could also muddle a couple of strawberry with a few rosemary needles in the bottom of a cocktail strainer before adding the gin and simple syrup. Shake and strain into glass and finish in the same manner.
