Spicy Shrimp Curry by girlichef
1 onion, quartered
2 garlic cloves, peeled
2" long pce. of ginger, peeled
1 jalapeño, stemmed (remove seeds & veins for less heat)
2 glugs Olive Oil
2 tsp. Korean Roasted Bamboo Sea Salt
2 Tbs. brown sugar
2 Tbs. red curry paste
2 Tbs. curry powder
1/2 tsp. cumin
1 tsp. turmeric
1/2 tsp. ground coriander seed
1 (14 oz) can coconut milk
1 c. water
1 lb. shrimp, peeled & deveined
1 c. peas
crushed red chiles- to taste
garnish &/or serve with:
thinned, plain yogurt
cilantro
jasmine rice
Combine onion, garlic, ginger & jalapeño in food processor and grind until they are chopped very fine. Heat olive oil in large pan and add the mixture. Saute over medium-high heat until they become tender. Add salt, sugar, curry paste and all spices. Stir for a few more minutes, taking care not to burn.
Add coconut milk and water. Bring to a boil, stirring to combine. They'll come together as it gets hotter...promise. Once it comes to a boil, reduce to a simmer and let it bubble away for about 10 minutes, or until it has thickened a bit.
Add shrimp and peas. Cook just until shrimp has turned pink. Add crushed red chiles, if using.
Serve with rice. Garnish with yogurt and cilantro. MMMM...MMMMM...Good!

are you reading my mind's tummy again? i went out for curry the night before last - they say that hot food is the best way to deal with heat - and tonite at 8:30 taking my bike ride and the temp was still 92, i'd say that another curry was in order!

I have my mind made up that I'm going to make a curry dish. This one sounds delish and I certainly love all things spicy. I've really been into using up pantry ingredients and holding off on the store. It's kinda fun to see what you can come up with.

Gosh that looks delicious. I love curry too! It's always a good idea to do this once in a while and just weed the freezer of the older things so you can restock with fresh. Besides, its a money saver and a challenge too!

...re-BAMBOO SEA SALT...I always get lots of questions when I use this! Korean Bamboo Roasted Sea Salt (I accidentally wrote smoked...I was thinking it was smoked...but it's actually roasted...sorry about that)is made by roasting sea salt in bamboo stalks that are sealed with clay. The salt absorbs minerals from the bamboo and clay. It's really good...sort of grey w/ dark flecks in it. I get it from my friend at my local farmer's market...click the button on my sidebar that says SALT and it'll take you to her website. BUT I hate to tell you that she doesn't carry this kind anymore (sorry...I'm using things up, remember!?) But if you ask her, she'll tell you all about the amazing salts she has. Maybe I'll do another sea salt giveaway soon!!

And Korean Roasted Bamboo Sea Salt? I'm Korean and I don't even know what that is! Sounds so...exotic! lol, I can't believe what I'm saying.
Sometimes I want to use up ingredients already in my kitchen, too! Sometimes it works or I'm just eating a lot of random things that don't go together. The dish looks great!

Cool that is how they make the green bamboo rice I have! No wonder Angie got excited from seeing this and saying we did shrimp, and had bare cabinet experience...looks great girli, and I will wait for my bowl, but hurry I am still hungry...I also used a green curry base for mine...your fault! LOL
