My Bit of Earth, was Gazpacho. Ina says that she thinks her gazpacho "should be chunky and spicy, but not hot, and never pureed or it will taste like V-8 in a bowl." Well, as delicious as this recipe is, I think it tastes like mild salsa...
in a bowl. I did notice that Penny over at
Lake Lure Cottage Kitchen added shrimp to hers...and I think that is an amazing addition. Grilled shrimp or chicken would go beautifully, but again...it is just so salsa-ish that it's hard for me to eat like soup. I'm pretty sure that the mondo batch of gazpacho in my fridge will soon get one more pureed veggie added to it (some jalapenos) ...along with some cilantro and a dash of lime juice. Then I'm just gonna dip tortilla chips in and eat the rest this way.
Gazpacho
from The Barefoot Contessa Cookbook p. 79
2 hothouse cucumber, halved and seeded, but not peeled
3 red bell peppers, cored and seeded
8 plum tomatoes
2 red onions I only used 1 (and I can still taste it a day later)
6 garlic cloves, minced
46 ounces tomato juice (6 c) I used V-8, because I prefer it...
1/2 c. white wine vinegar
1/2 c. good olive oil
1 Tbs. Kosher Salt I used sea salt
1 1/2 tsp. freshly ground black pepper
Roughly chop the cucumbers, bell pepper, tomatoes and red onions. Put each vegetable separately into a food processor and pulse until coarsely chopped. Do not over process!
After each vegetable is processed, combine in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt and pepper. Mix well and chill before serving. The longer the gazpacho sits, the more the flavors develop.

So, this gazpacho is tasty, but I think I actually prefer mine smooth...at least with these ingredients in particular. If it was more cucumber based, I may not mind the chunks, as it would seem less like salsa (which I love, by the way). Be sure to head over to visit more

I just bought the ingredients for gazpacho at the farmer's market yesterday! I saw the PW's post and have to try it. I'll be serving grilled shrimp with mine....or turning it into salsa if I end up feeling the same way about cold tomato based soup. We shall see!

You know, I never realized how close this is to salsa but now I agree! I love dipping things in my soup so I can't wait to try tortilla chips. Yours looks so bountiful in that big glass.
The way I figure it, it may be hard to strike the right balance between V8 in a bowl and chunky salsa. I've seen it done but never even tasted it, much less made it. Hey, yours turned out salsa-ish? Then definitely add some heat to it and dip away! It looks fresh and delicious and that's the best part. :)
salsa...gazpacho...either way hand me same tortilla chips or bread and I'm good to go. Since you're not sure which it is why now call it a gazpalsa or a salsacho. LOL.

I love cold soups and will try the recipe - Ina's recipes usually work for me. Maybe if it was pureed? It sure looks refreshing though and the photo mosaic is grand! I will need to try that on the blog.
I like both gazpacho and salsa. But you're right. They are very close cousins. LOL
Bummer you didn't enjoy it more--it looks good. I have to have mine pretty chunky except for the onion, and shrimp do make a wonderful addition I've found.
My late husband loved gazpacho and I made if for him all the time. This one looks really good.

I made mine a little smoother than Ina's, for the same reasons you mentioned!
(and now, reading about the red onion, I am glad I used shallots!)
It was tasty and cooling though, and yours has such great colour!
LOL on the onion & still tasting it a day later. I only added half an onion to mine, and that was with halving the entire recipe.
MY DH thought it resembled salsa. He called his post-gazpacho breath, "gestapo breath."
I agree that adding more cucumber would help.

I actually love salsa so much that this way I could eat it with a spoon and not feel guilty lol! This is absolutely gorgeous!
I think I could eat salsa by the spoonful too! We actually tried several "dippers" in our soup--tortilla chips among them. I think my favorite was shrimp.
